Chana masala, also known as chole masala is a popular dish of India. The main ingredient of this recipe is chickpea called chana or kala chana. This chana masala recipe is made with finely chopped onions, tomatoes and Indian spices. It is usually served with poori, naan , kulcha or plain rice.

  • 1 cup chickepea or chole, soaked for 8 hours.
  • 4 tbsp oil or butter
  • 1 inch cinnamon stick
  • ½ tsp cumin seeds
  • 1 tsp ginger-garlic paste
  • 1 bay leaf
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 1 tbsp kashmiri chili powder
  • ½ tsp cumin powder
  • ½ tsp turmeric powder
  • 1 tsp coriander powder
  • ¾ tsp aamchur or dry-mango powder
  • ½ tsp garam masala
  • salt to taste
  • 2 cups water
  • 2 tsp coriander leaves, finely chopped
  • ½ lemon juice (optional)


  • Heat oil or butter in a pressure cooker on medium flame.
  • Add 1 bay leaf, cinnamon and cumin seeds. Once the cumin seeds begins to splutter saute well till you get a pleasant smell.
  • Add ginger-garlic paste and finely chopped onions and saute for 1 minute till the onions turn to golden brown color.
  • Now add finely chopped tomatoes to the cooker. Saute till the tomatoes becomes soft and mashy.
  • Add red chili powder, turmeric powder, coriander powder, cumin powder, mango powder, garam masala and salt. Saute all the ingredients and mix them well.
  • Add soaked chickpeas or chana and 2 cups of water to the mixture. Saute and mix well.
  • Pressure cook these chickpeas or chole for 5-6 minutes on medium flame.
  • Now open the lid , transfer these chole into a serving bowl.
  • Squeeze some lemon juice, garnish this Chana Masala with coriander leaves.
  • Served hot with poori, naan, kulcha or plain rice.
