Dum Aloo is a very delicious Indian style dish generally made from baby potatoes slow cooked in a spicy gravy. It is a rich and creamy potato based curry hails from the Indian cuisine. The recipe is prepared with tomato -onion gravy with deep fried baby potatoes.

Ingredients

  • FOR ALOO PREPARATION:
  • 8-9 baby potatoes
  • 4 tbsp oil
  • ½ tbsp salt
  • 2 cups water, or as per requirement
  • 1 tsp kashmiri chili powder
  • ½ tsp turmeric
  • FOR GRAVY:
  • 1 inch cinnamon stick (Dalchini)
  • 3 -4 cloves
  • 2 cardamom, (elaichi)
  • ½ onion, sliced
  • ¾ tsp ginger-garlic paste
  • 1 large tomato, finely chopped
  • 10 cashews
  • FOR DUM ALOO RECIPE:
  • 1 tsp oil
  • ¾ tsp cumin seeds
  • 1 - 1½ tsp chili powder
  • ¼ tsp turmeric powder
  • ¾ tsp coriander powder
  • salt to taste
  • ¼ tsp cumin powder
  • ¼ cup curd or yogurt
  • 1 tsp kasuri methi or dry fenugreek leaves
  • few coriander leaves, finely chopped
  • ¾ - 1 cup water as per requirement

Instructions

  • First of all, boil these baby potatoes in 2 cups of water and salt.
  • Pressure cook for 2-3 whistles. once pressure releases, allow them to cool.
  • Peel the potatoes and wash gently.
  • Heat pan with 4 tbsp oil, once the oil turns hot , add turmeric powder and red chili powder.
  • Then add boil potatoes to it.
  • Gravy Recipe :
  • Heat 4 tbsp oil in a pan.
  • Now add ginger-garlic paste, saute for 1/2 minute until the raw smell disappears.
  • Once the raw smell disappears, add tomato-onion paste and saute till they start releasing oil.
  • Add few cashew nuts continue to saute till cashew turns to light red colour.. Now turn off the flame once the mixture get cooled.
  • Blend this mixture to form a smooth paste and keep it aside.
  • Dum Aloo Recipe:
  • Heat a pan with oil, add some cumin seeds.
  • Once they splutter, add masala paste and fry for 5-6 minutes.
  • Now add chili powder, turmeric powder, coriander powder, cumin powder and salt to taste. continue to fry till oil separates.
  • Turn off the flame to add curd.
  • Add 1 cup of water or as required. Give it a good stir and boil for 2 minutes on medium flame.
  • Finally, add baby potatoes to the gravy. Close the lid and allow potatoes to cook on low flame for 15-20 minutes. Keep stirring in between so that the gravy is completely absorbed by the potat
  • Add some crushed fenugreek leaves. Stir and cooked just for one minute.
  • Sprinkle some coriander leaves and serve this Dum Aloo recipe hot with chapati, naan or rice.
