Poha recipe is a healthy breakfast recipe. It is prepared from flattened rice, diced potatoes, finely chopped onions, peanuts and other herbs and spices mainly served in north Karnataka, Madhya Pradesh, Maharashtra, Gujarat and Telangana.

Ingredients

  • 1 cup thick poha or flattened rice
  • water for soaking
  • 1 tsp mustard seeds
  • ½ tsp cumin seeds
  • pinch of asafoetida (hing)
  • 6 - 7 curry leaves
  • 1 small onion, finely chopped
  • 1 green chili, finely chopped
  • ½ tsp turmeric powder
  • 1 inch ginger, finely chopped
  • 1 finely chopped small potato
  • 2 tbsp roasted peanuts
  • 1 tbsp finely chopped coriander leaves,
  • 1 tbsp lemon juice
  • ½ tsp sugar
  • salt to taste
  • 3 tsp oil

Instructions

  • Take a large bowl ,soak Poha or flattened rice till they turn soft and easy to break.
  • Drain off the water from poha.
  • Add in salt and sugar.
  • Mix gently and keep aside.
  • Now take a large pan. Heat oil to medium flame.
  • Then add mustard seeds, cumin seeds, asafoetida and curry leaves.
  • Allow to splutter.
  • Further saute onions till they change colour.
  • Also saute chlli and ginger till the raw smell disappears.
  • Additionally, add potato, salt and turmeric. saute for a minute.
  • Cook potatoes on low flame and cover for 5-10 minutes
  • Furthermore, add in soaked poha and roasted peanuts.
  • Mix gently. cover for 2 minutes.
  • Now switch off the flame. Squeeze some lemon juice over it.
  • Garnish with coriander leaves and serve hot.
