Ingredients

  • 2 tsp Oil
  • 1 tsp Garlic
  • 3 tsp Butter
  • 2 Green Chilies (finely chopped)
  • 2 tsp Ginger
  • 5-6 Curry Leaves
  • 1/2 Cup Onion, chopped
  • 1/2 Cup Tomatoes, chopped
  • 2 tsp Turmeric Powder
  • 2 tsp Chili Powder
  • 1 1/2 tsp Pav Bhaji Masala
  • 1 tsp Coriander Stems
  • 4 Eggs
  • Coriander Leaves
  • Salt to taste

Instructions

  • Firstly , take a bowl. Wash it with clean water.
  • Break all the eggs to a bowl.
  • Heat 2 tbsp oil in a pan.
  • Add garlic, butter, green chilies and ginger to the pan till you get a pleasant smell.
  • Now add curry leaves and finely chopped onions to the pan and saute together till the onion turns into golden brown color.
  • Add tomatoes to the mixture. Saute together till tomatoes turn soft and mashy.
  • Add all the spices like turmeric powder, chili powder, salt , Pav bhaji masala and stir them well.
  • Now pour the eggs to the pan , allow them to cook properly.
  • Switch off the flame once it is cooked. Pour some butter over it.
  • Garnish this delicious Egg bhurji with coriander leaves.
  • This recipe can be best served with buttered bread or chapati.
