Butter Chicken vs Chicken Tikka Masala Recipe

The main difference between Butter Chicken and Chicken tikka masala lies in the gravy. A Large number of tomatoes are used in Butter chicken curry, on the other hand, onions are majorly and widely used in Chicken tikka masala curry. In addition to this, the spices used in Butter chicken is more than used in Chicken tikka masala recipe.

Another main difference is: A lot of butter is used in Butter Chicken recipe while a combination of oil and butter generally used in Chicken tikka masala gravy.

Some Important Ingredients

Yoghurt plays an important while making the recipe. Thick yoghurt works best in chicken tikka masala. Boneless chicken is preferred, as it tastes great and smooth. However, you can use chicken breast as an alternative option but for that, you need to first soak the chicken breast in salty water for at least 30 minutes.

For marination: You need lemon juice, yoghurt, ginger garlic paste, vegetable oil and mixed spices. Last, pieces of chicken should be marinated properly so that they can soak all the masala’s.

Ingredients

  • For Chicken:
  • 800 gms pieces of boneless chicken; cut into pieces
  • 6 tbsp plain yoghurt
  • 3 cloves of garlic, minced
  • 1 tbsp cumin
  • 1 tbsp paprika
  • 1/2 tbsp grated ginger
  • 1 and a half tbsp salt
  • For Tikka Masala Sauce:
  • 2 tbsp of oil
  • 2 tbsp butter
  • 1 large onion finely diced
  • 1 and 1/2 tbsp garlic; grated
  • 1 tbsp ground coriander
  • 1 and 1/2 tbsp garam masala
  • 1 and 1/2 tbsp ground cumin
  • 1 tbsp ginger; grated
  • 400g tomato puree or tomato sauce
  • 1 tbsp ground red chilli powder (adjust to your taste preference)
  • 1 tbsp turmeric powder
  • 1 tbsp Kashmiri chilli
  • 1 tbsp salt
  • 1 and 1/4 cups of thickened cream
  • 1 tbsp brown sugar
  • 1/4 cup water if needed
  • 4 tbsp Fresh cilantro to garnish

Instructions

  • Take a medium-size bowl.
  • Put all the chicken pieces to it.
  • Add yoghurt and all the ingredients to this mixture
  • Combine the chicken with the spices until all the pieces are evenly coated.
  • Let the mixture marinade or nearly 30 minutes.
  • Heat oil in a pan. Add chicken pieces in the batch of 2 or 3; don’t put all the pieces together.
  • Fry till the chicken pieces get brown from both the sides.
  • Transfer all the chicken pieces (fried) to a bowl.
  • Now heat the butter in another pan, add diced onions to it till they turn to golden brown colour.
  • Add ginger and garlic and saute for 1 minute till the raw smell disappears.
  • Add garam masala, turmeric, cumin and coriander powder. Saute for 1 minute.
  • Now add all the tomato puree along with red chilli powder and salt.
  • Let it simmer for 15 minutes till the gravy becomes thicken.
  • Add all the chicken pieces to the puree and cook for 10 to 15 minutes or more than that; till all the pieces get cooked completely.
  • Pour some water to thin out the sauce, if required.
  • Sprinkle some cilantro and served it hot with roti, rice, naan.
