Shahi Paneer is a creamy-gravy dish made with paneer and Indian spices. The creaminess of this recipe comes from onion, cashews, nuts, and curd. Additionally, This is one of the popular paneer recipes. Shahi dish originated in the royal kitchens of Mughal and most of them were meat-based. That’s why it is a Royal Paneer Dish. It is generally made from Royal cottage cheese, dry fruits, yogurt, saffron, whole spices, and cream. Adding cream makes this dish royal and rich.

Shahi Paneer gravy is generally prepared from the onion – almond – curd – cashews. Therefore this recipe is rich in nature. Adding dry fruits and curd to Shahi Paneer Recipe gives it an aromatic smell.

History Of Shahi Paneer

Needless to say, Shahi Paneer is an authentic Royal Indian dish. The word Shahi itself meaning Royal. Many sources mentioned that Mughlai food was made rich with the use of nuts, almonds, and curd. Tomatoes were not used as they did not exist in India during that time. Although it is a Shahi recipe, it is made in different styles. Tomatoes are not allowed to use in this recipe. However, some restaurants use tomatoes as it Increases the tanginess of the gravy.

Lastly, Shahi Paneer Special, some restaurants add Kewra water to the Mughlai Cuisines. Though Kewra water doesn’t add any taste to the food, it definitely brings a great aroma to Mughlai food.

Tips for making Best Shahi Paneer Recipe

Use Fresh curd or yogurt while making Shahi Paneer. Fresh curd or yogurt have is less sour than the store ones. Homemade curd is best.

Use fresh Paneer pieces. If using store-bought, immense them in warm water for 10-15 minutes. Drain it properly then use it.

Usage of whole spices than readymade garam masala is always better as it enhances the aroma of the Shahi Paneer gravy.

  • 1 and 1/2 cup Paneer Cubes
  • 1/2 Cup Curd or Yoghurt
  • 1 Teaspoon Ginger-Garlic paste
  • 1/4 Teaspoon Red Chili Powder
  • 1/8 Teaspoon Turmeric Powder
  • 3/4 to 1 Teaspoon Garam Masala
  • 1 Pinch Saffron
  • Salt to taste
  • 1 Pinch Saffron
  • 2 Tbsp Ghee
  • 2 to 4 drops of Kewda Water
  • 3/4 Cup of water
  • 3 Tbsp Cream (Optional)
  • Spices
  • 1/2 Teaspoon Cumin
  • 2 to 3 Cloves
  • 1 to 2 inch Cinnamon
  • For Shahi Paste
  • 12 Whole Cashews
  • 8 Almonds
  • 3 Green Cardamoms
  • 1 Green Chili
  • 1 Cup Onion Cubed (2 medium)
  • 1 to 2 Tomato Cubbed


  • Preparations:
  • Heat a pan. Add one tablespoon ghee to a pan.
  • Add cashews, almonds, green cardamoms. Fry till they turn golden brown.
  • Add green chilies, onion and fry till they turn to golden brown colour.
  • Add tomatoes to the pan. (Tomatoes are optional)
  • Add a little amount of water to the pan so the entire mixture gets mushy and soft.
  • Cook them completely. Add to the blender. Blend it till the mixture converts into a smooth paste.
  • Now take Paneer cubes. Fry them lightly till they turn to golden colour.
  • Immerse the paneer cubes in warm water. This helps to soften the paneer.
  • Process of Shahi Paneer:
  • Heat another pan. Add ghee to it.
  • Add cumin, cloves and cinnamon.
  • Saute for one minute till the nice aroma comes out there.
  • Add ginger-garlic paste. Saute till the raw smell goes off.
  • Add onion-cashew-almond paste, chili powder, garam masla, some turmeric and salt.
  • Fry for 3-4 minutes till the gravy thickens.
  • Add a little amount of water to the pan. (if required)
  • Now, take a separate bowl. Beat the curd with a spoon till it becomes soft.
  • Add the whole curd to the pan at the same time keep the flame low.
  • Mix the whole mixture well. Cook it till the mixture leaves the side of the pan.
  • Pour 3/4 cup of water. Add salt as per the requirement.
  • Add paneer cubes and cook for 2 minute on low flame.
  • Pour Kewda water and some cream.
  • Transfer Shahi paneer to a bowl. Garnish it with cream and some coriander leaves.
  • Served hot with roti, rice and naan.
