Chilli Chicken Recipe

Chilli Chicken Recipe is one of the most popular Indo Chinese recipes mainly served throughout India. It is mainly served as a starter in restaurants. However, its vegetarian alternatives are made with Paneer, Tofu, potato, and mushroom. Chilli chicken is made with chicken, bell papers, garlic, chili sauce, and soya sauce.

To begin with the recipe, Firstly boneless chicken cubes are marinated in soya sauce, chili sauce and other spices. Marination takes place at least for 20 minutes. Then we need to do is to deep fry all the marinated chicken cubes. Lastly, they are seasoned in flavourful sauces.

Is chili chicken very spicy?

The chili chicken has full of flavors and it tastes really delicious. Most people assume it to be too hot and spicy. Chili chicken has a right amount of sweet, spicy and sour taste.

The type of hot peppers you use in this dish will be your preference, depending on how spicy you like your food.

Tips to make Chili Chicken

Usually, the restaurant-style chili chicken has Ajinomoto, which is used to add a unique flavor to the chili chicken recipe. But you can still make Chili chicken without using Ajinomoto. The restaurant-style Chili chicken most often makes us grease sick and makes us dehydrate a lot because of the use of Ajinomoto in it.

If you decide to use white meat instead of dark meat, brine the chicken with a saltwater brine (1 1/2 tablespoons of salt with 4 cups of water) for 1 hour before marinating the chicken with the marinade to make the chicken juicy and moist.

You can deep fry the chicken pieces if you prefer, I tend not to as we eat it so often. Also, I have used chicken thigh which is a much more succulent cut and despite frying and then simmering in the gravy, doesn’t dry out. I have used Sweet soy sauce which is a thicker and slightly sweeter soy sauce and is ideal to get a dark rich sauce but if you can’t find any just swap it for dark soy and add a pinch of sugar to balance the flavor. Also, a regular shop-bought chili garlic sauce for this recipe is great.

  • Marination for Chili Chicken:
  • 250 grams of chicken (Boneless)
  • 1 and 1/2 teaspoon red chilli sauce
  • 1 and half teaspoon soy sauce
  • 1/4 teaspoon pepper powder
  • 1/4 teaspoon pepper powder
  • 2-3 tbsp corn flour
  • 3 tbsp all purpose flour or maida
  • 1/4 teaspoon red chili powder
  • 1/2 tbsp salt and 1 and half tbsp water
  • Seasoning for Chili chicken:
  • 1 and a half teaspoon soy sauce
  • 2 tbsp red chili sauce
  • 1/2 tbsp red chili powder
  • 1/4 teaspoon pepper powder
  • 1 teaspoon vinegar
  • 1 tbsp sugar
  • Other Ingredients: (Veggies)
  • 1 medium onion (thinly sliced)
  • 2 teaspoon garlic chopped
  • 1/2 cup bell pepper
  • 1-2 green chillies
  • 4-5 leaves celery
  • 1 tbsp spring onion


Preparation for Chili Chicken:

Firstly, marinate chicken pieces with chilli sauce, soya sauce and pepper powder. Set aside for atleast 1 hour.

Sprinkle corn flour, plain flour and chili powder on the chicken cubes. Mix it well. Coat the chicken well.

In the next step, Take a large bowl. Add chili sauce, soya sauce, red chili powder and sugar. Mix well.

Process of Chili Chicken:

Heat oil in a pan on medium flame. Add 5-6 chicken cubes at a time. 

Shallow fry all the chicken cubes. Don’t over fry. 

Heat 1 tbsp in oil on high flame. Add ginger-garlic paste. Fry for 1 minute.

Add onions, capsicum, celery and green chillies. Don’t over fry. The veggies should be crunchy.

Now pour the sauce which we have made earlier in a pan. Add some water if the sauce thickens.

Add fried chicken cubes. Mix well. Add 1 tsp cornflour. Allow the sauce to thicken.

Add some more sauce to make the gravy a little spicy.

Toss the chicken cubes till all the cubes completely coated with the sauce.

Serve chili chicken hot with the appetizer or with fried noodles and fried nice.
