Dahi Vada Recipe:-

Dahi Vada is a classic North Indian snack and is served across India. Dahi Vada is simply deep-fried lentil balls dunked in yogurt where Dahi simply means curd or yogurt and Vada are deep-fried lentil balls.

Ofter topped with different kind of chutneys and some spices, Dahi Vada is known for its unique flavour and its authenticity. Although, there are many versions of Dahi Vada across India.

Well made Dahi Vada simply melt within our mouth. Sweet Sour tamarind chutney and some spices enhance its taste. Making Dahi Vada is quite easy but definitely need some extra preparations while making it. Preparation includes soaking of Dal and making of chutneys.

Tips for making soft and mouth-watering Dahi Vada:

If you want to make soft Dahi Vada then firstly soak the dal properly and grind it to make a smooth paste. After that, soak the fried vadas immediately in water. Soak them up and turn light. Fresh ground green chutney and tamarind chutney are musts. Without it, Dahi Vada recipe is incomplete.

Ingredients

  • For Vada Recipe:
  • 1/2 cup Urad dal or black gram (soaked)
  • 1/2 inch ginger
  • 1 green chili
  • 3/4 cumin seeds
  • salt as per taste
  • pinch of hing or asafoetida
  • 2 cups chilled water
  • 4-6 cashews
  • oil for deep frying
  • 2 cups of curd
  • For Green chutney:
  • 1 cup coriander leaves
  • 1/4 cup mint
  • 1 green chili
  • 1/4 inch ginger
  • 1 clove garlic
  • 1/2 teaspoon cumin
  • lemon juice
  • 1 tbsp onion
  • salt as needed
  • very little water
  • For tamarind chutney:
  • 1/4 cup tamarind
  • 1/2 cup Jaggery
  • 1/4 cup dates soaked
  • 1/2 tsp dry ginger powder or saunth powder
  • 1/2 tsp red chilli powder
  • 1/2 tsp coriander powder
  • For garnishing Dahi Vada:
  • 3/4 tsp roast cumin seeds
  • 1/4 tsp red chili powder
  • 3/4th chaat masala

Instructions

  • Process of making Dahi Vada Recipe:
  • Wash urad dal gently and soak for atleast 8 hours.
  • Making of tamarind chutney:
  • Take a medium size vessel. Heat 1 cup of water. put tamarind, jaggery and dates. Let it simmer for 4-5 minutes, till tamarind turns soft and mushy.
  • Add red chili powder, cumin powder and coriander powder. Mix well. Add more jaggery if required. Cool this mixture for 5 minutes. Then blend it to make a smooth paste.
  • At last, add some dry ginger powder to it. You can also store this chutney for 4-6 days in your refrigerator.
  • Making of Green Chutney:
  • Add all the ingredients required to make a green chutney. Blend them to make a complete smooth paste. You can also use bhuna chana to make this chutney thick.
  • Making of Dahi Vada:
  • Take a blender. Add soaked urad dal along with cumin, green chilli, ginger, and asafoetida and some salt.
  • Blend all the batter till it turns fluffy and smooth. Add water if desired.
  • Transfer the whole batter to a bowl. Beat it for 1 minute. 
  • Now heat the frying pan on medium flame. Take a small portion of batter and pour it into the oil. Fry vadas till they turn to golden brown colour. Transfer all the vads to a plate. Allow them to cool.
  • Now take a large bowl. Pour some cold water to it. Drop all the vadas one by one. Rest them for 20 minutes.
  • Remove the excess water absorbed by the vadas. Place them in a serving plate.
  • Take yoghurt. Beat it till it becomes smooth and thick. You can also add some salt and a little amount of salt to yoghurt.
  • Now its time to pour curd or yoghurt all over the vadas. Allow resting for at least 15 minutes.
  • Top Dahi Vada with a good amount of green and tamarind chutney. 
  • Sprinkle some cumin powder, red chili powder, chaat masala and some black salt. Garnish with coriander powder. 
  • Serve Dahi Vada cold. Enjoy!!
