Veg Kolhapuri is an authentic Maharashtrian dish originated in Kolhapur. Veg Kolhapuri is known for its spiciness, hotness and for its pungent flavours. It is simply made up of mixed vegetables dipped in coconut curry. It is typically cooked with mixed vegetables such as Potato, Cauliflower, Broccoli, carrot, peas. You can also add some extra veggies as per your requirement. Furthermore, you also add or reduce the spiciness of the curry by adding or reducing the number of red chillies. It is spiced with a Kolhapuri masala which is a mixture of whole dry spices and dry coconut. Kolhapur dishes are known for their flavours and spiciness.

Kolhapur is famous for the growing of hot red chillis and this curry lives up to its name as it has a very aromatic and spicy flavour that it gets from a specially blended curry masala powder. This Veg Kolhapuri recipe’s unique process of first preparing Kolhapuri curry masala with dry roasted red chillis, coconut and few other spices and then cooking boiled/steamed mixed vegetables like French beans, carrot, potato, green peas, capsicum, tomato, onion etc, with it in milk gives it an authentic flavor, taste and texture.

Veg Kolhapuri Masala: It is advisable to use homemade masala powder: Freshly use ground masala is preferable as it is made of fresh spices and herbs.

  • ½ medium-sized potato, cut into thick pieces
  • 1 small carrot, cut into thick pieces
  • 5 beans, chopped
  • 1 cup cauliflower, florets
  • 2 cups water
  • ½ tsp salt
  • 1 tsp sesame seeds
  • 1 tsp poppy seeds
  • ½ tsp cumin seeds
  • 1 tsp coriander seeds
  • 1 inch cinnamon stick / dalchini
  • 2 cloves / lavang / lavanga
  • 1 cardamom pod / elachi / ellaki
  • 4 black pepper / kali mirch
  • 3 dried kashmiri red chili
  • 2 tbsp coconut, fresh / dry / desiccated
  • 3 tbsp oil
  • 1 medium sized onion, finely chopped
  • 1 tsp ginger-garlic paste
  • 2 medium sized tomatoes, finely chopped
  • ½ capsicum, cubed (colour of your choice)
  • ½ tsp turmeric / haldi
  • salt to taste
  • 1 cup water
  • 3 tbsp coriander leaves, finely chopped


Firstly boil vegetables along with little a little amount of salt for 10 minutes.
In a large pan, dry roast, sesame seeds, poppy seeds, coriander seeds, cumin seeds.
Also add cinnamon, cardamom, cloves, pepper, red chilli and coconut to the pan. Roast them for 10 minutes.
Dry roast and blend to smooth powder without adding any water. Keep aside this mixture.
Heat oil in a pan and saute onions add ginger-garlic paste for at least 1 minute.
Then add tomatoes to it and saute well.
Furthermore, add capsicum and saute slightly.
Also, add prepared masala and salt to the pan. Mix well.
Saute till the oil separates from the veggies and masala.
Furthermore, add boiled vegetables, water adds coriander leaves.
Cover and simmer for 15 minutes.
Lastly, serve veg Kolhapuri with tandoori roti or garlic naan.
